Foodie Friday with Dr. Laura Klein: Super Easy Turkey Taco Skillet

What I love about this particular dish by Yummy Healthy Easy is how incredibly easy it is! The 30 minute time frame is perfect for a quick weeknight meal. Canned vegetables, jarred salsa, and brown quick rice make simple work of preparation and most of the recipes minutes are cooking time.

If you don’t have taco seasoning, substitute 1 tablespoon chili powder, 1 1/2 teaspoon ground cumin, ½ teaspoon salt, 1/2 teaspoon garlic powder (or more if you like it a a lot), and a pinch of either red peppers or ground cayenne pepper.

This makes six servings and is great for guests and picky eaters because they can add toppings for their own preferences. Feel free to share this post with friends and family!

Super Easy Turkey Taco Skillet

Ingredients:
1 lb. lean ground turkey
1 pkg. taco seasoning
2¼ cups water
1 (16-oz) jar salsa (thick & chunky kind works best)
1 (11-oz) can corn with red & green bell peppers (Mexican corn)
2 cups instant brown rice
Toppings such as shredded cheese, cilantro, green onions, sour cream, tomato and lettuce, lime wedges to squeeze, canned beans of choice.

Directions:

  1. In a large skillet over medium heat, cook and brown ground turkey, breaking meat up into small pieces.
  2. Stir in seasoning mix, water, salsa, corn, and can of beans if you like. Bring to a boil. Stir in rice. Simmer on medium for 5 minutes.
  3. Cover with tight-fitting lid, and turn off heat (keep pot on burner). Let stand 15-20 minutes, until liquid is absorbed and rice is tender.
  4. Dish up into bowls and top with favorite toppings. Enjoy warm!
